Bay leaf (also called laurel leaf) is the leaf of the sweet bay (Laurus nobilis) evergreen tree in the Lauraceae family. A popular spice used in pickling or dipping foods, as well as in stews, stuffings and fish. It tastes fragrant but slightly bitter. The essential oil content is about 2%, and the main component is cineole (C10H18O). Dried bay leaves are smooth and glossy and are often used whole and removed from dishes after cooking.
